I'm embarrassed to ask but how do people get in and out of the 3rd Carnival row with captains chairs?
We got our van but haven't figured out how to properly use the third row.
I would put the captain chairs in their most outboard position and walk in between them. That is without child seats, I’m not sure if there is enough room to walk down the middle if you have a child seat in each captain chair.

I believe the other option is to move the captain chairs all the way forward and also fold them as far forward so you can walk behind them to access the third row.

We have the seats in the most outward position and then lift the arm rests up during ingress/egress. The kids can get in and out with zero issues and myself and my SO can as well though it does take a little more planning/contortioning due to the roof height.

Wow. I wish I would have known this before getting the captains chairs. They make the third row pretty useless then.
Is there any way to quickly collapse the second row seats when trying to exit from the third row?

Not with the VIP seats. It's a lot of waiting for that motor to lean the seat forward and as cocobot mentioned, the controls are on the inside which makes it even less convenient to use that method. Unless you are constantly packing adults in the third row, it's not too bad. Plus if you are seating 4 or less, folding the third row down and scooting the second row all the way back feels like you are riding in first class seats with the leg rest extensions.
