I just purchased a 2023 carnivale. I am super frustrated with how to make the rear entertainment system work. It
feels like it really should not be this hard. I have watched all the videos. The very first step where I try to connect to my iphone hotspot (t mobile) doesn’t work. Has anyone run into this or solved this?

Same here. I was able to connect it to my home wifi just to make sure they worked. I was able to connect it to my iPhone hot spot too. I just set up the vehicle hotspot with a Verizon account and I will try it tomorrow. Don't forget to turn on the vehicle wifi hotspot in the dash screen menu. Mine disconnects every time I shut down my vehicle.
